WHAT WE’RE EATING THIS WEEK:
This week our menu plan is:
-Monday: We were at Great Wolf Lodge
-Tuesday: Spaghetti Meatball Pasta Bake
-Wednesday: Chicken Pot Pie + Salad
-Thursday: Chicken Enchilada Casserole + Salad
-Friday: Chicken Tacos (with leftover salsa chicken from Thursday)
-Saturday: Pulled Pork Sandwiches + Fries
-Sunday: Pulled Pork Quesadillas or Tacos
*will use any extra pork in breakfast tacos and/or scrambled eggs
WHAT I’M REMINISCING ABOUT:
I was randomly going back through this Day in the Life post when Maddox was 3 months old and am so grateful for the boys being the ages they are. A two and four year old are extremely hard, but nothing compared to a newborn. I was a hot mess in this picture. Maddox wouldn’t sleep and I was resorting to cookies for relief! I absolutely love this stage right now.
WHAT I’M LOVING:
I’m loving the more relaxed feeling of summer. We just got done with a super busy week of vacations, but other than that, our schedule is so relaxed. Ryan is home so we do a lot together as a family.
WHAT WE’VE BEEN UP TO:
Ryan and I took a kid free vacation to Las Vegas this past week. It was our first vacation as a couple since having kids (that was about 5 years ago)…I didn’t even have this blog when we last went on our vacation (babymoon in Dominican Republic). It was absolutely amazing and I’ll share the details soon! A day after we got back home, we took the kids to Great Wolf Lodge (about 45 minutes away) with my brother and sister in law. The kids had a blast and Beckham did not want to leave.
Can’t say I’m dreading much.
WHAT I’M EXCITED ABOUT:
Well, I’m super excited about my little sister getting pregnant! This has been a very long journey and an unexpected surprise. As a matter of fact, she found out she was 18 weeks pregnant at her FIRST doctor’s appointment. They live in Louisiana so we don’t get to see them enough, but I will definitely be going down there when she has the baby. It’s a December due date and they’re waiting to find out the gender. And although I don’t want to go into details as it’s not my story to tell, we got some really good health news this month in my family! #cancerfree (I might share details in the future, but after that person has shared). The rainbow after the storm in both of these circumstances.
WHAT I’M WATCHING/READING:
I’ve been watching The Bachelorette (we have a watch party on Mondays). I’m so excited to see who she picks. Ryan and I are also watching the last season of Criminal Minds.
As far as reading goes, I’m reading a few different books (I’m a “skip around” reader). I’m reading Daring Greatly by Brene Brown. It’s about breaking through fears to be vulnerable. I’m reading The 7 Habits of Highly Effective People by Steven Covey. I love this book and find a lot of the info very interesting.
WHAT I’M LISTENING TO:
I’ve been listening to a lot of Meghan Trainor songs. She has so many good ones!
WHAT I’M WEARING:
Lots of workout clothes. I love summer. I rarely wear makeup as well. I did dress up some in Las Vegas.
I love this shirt. It’s a loose tank top that opens in the back. Can be a workout top or a casual top. I got it at Target this season.
Proof that I wear makeup and own a dress. 🙂
WHAT I’M DOING THIS WEEKEND:
Hanging with my family.
WHAT I’M LOOKING FORWARD TO NEXT MONTH:
Umm hello, the Olympics. I am dying waiting for the games to start. I hate that it’s every 4 years and cannot wait! My favorite sport is soccer of course. I love all the games, but a couple other favorites are gymnastics and track as well. Fun fact: Did you know I grew up playing on ODP teams (Olympic Development Program)? I made it as far as the U-16 National team and U-18 Region team. Those were some intense times in soccer, but cool to look back on. We trained at the Chula Vista Olympic Training Center. I thought I was in soccer Heaven.
Ryan and I will also celebrate 9 years of marriage next month (been together for 13 years). We got married August 10, 2007! This picture is on our Honeymoon in Jamaica! Look how young we look. We plan on going back for Anniverasry #10!
And on a more embarrassing note, I’m excited about Bachelor in Paradise starting. #truestory #tellmeimnotalone
WHAT ELSE IS NEW:
I can’t think of anything new. Hopefully I can share our Vegas trip this week on the blog.

You mentioned salsa chicken for you casserole and tacos. How do you make your salsa chicken? Thank you

I pour salsa to cover bottom of crockpot, lay chicken (frozen or thawed) on top, sprinkle some taco seasoning on top of chicken (just enough to cover chicken), then pour some more salsa to cover chicken on top. Then I cook it for about 3-4 hours on high if frozen. If thawed, I do it about 2-3 hours on low. Then I shred chicken with fork. This day I had cooked it on high (it was frozen) for 4 hours and the chicken just fell apart as I shredded it. Salsa chicken is the most tender chicken. Hope that helps.
