Why I haven’t shared this recipe on my blog is beyond me. This is a staple for us and I make it often for get togethers, summer night snacking, and just because. It’s simple, easy to make, and a crowd pleaser. I don’t really measure when making guacamole, but I’ll include some measurements as a guide.
Here’s what you’ll need:
1. 2-3 Avocados (medium size)
2. Yellow onion, minced finely (about 1/4 cup chopped)
3. Red Bell Pepper, minced finely (about 1/4 cup chopped)
4. Cilantro (about 1/4 cup chopped)
4. Salt (a pinch or two)
Directions:
Mash the avocadoes together. Add the chopped onion, red pepper, and cilantro. Add salt to taste. Mix it altogether.
I wanted to make some guacamole one day, but didn’t’ have any tomatoes, but I had a red pepper instead. I decided to use it in place of the tomato and now I won’t use anything else (although I still enjoy a firm crunchy tomato). It gives it a crunch and sweetness to it. If you absolutely hate red peppers, just substitute a tomato.

I always add either a little bit of chopped Serrano or jalapeño peppers, take out the seeds to control the heat. And the most important thing is lime juice use fresh never from a bottle! If helps from turning the guac brown too quickly.

Try grilling your veggies first! I add jalapeño, so I grill that and the onion, then chop them up and add to the avocado. I use real lime juice and tomato, along with cilantro in mine. The grilling of the veggies is simple if you are already grilling steak or chicken for fajitas! If you keep the avocado's pit in the bowl, it also will not brown. Keeps it pretty and green!

I just started using red pepper too! Every time I make it, it's different. Usually use garlic, cilantro and basil, lime juice and a jalepeno. I like spicy.
