Cookie Cake Recipe

I’m obsessed with those cookie cake slices in the mall.  It costs almost $4.00 for ONE slice.  I don’t even know how much an entire cake costs, but I imagine it would be no cheaper than $35.00!

So let me share the EASIEST and CHEAPEST recipe for a cookie cake.  And the best part is it tastes even better than the ones in the mall and a heck of a lot better than store bought ones.  I can’t stand those!  All you need is 3 things:
1. A roll of TOLLHOUSE cookie dough (large or small)*
2. Icing – I always use chocolate and add white (vanilla) sometimes too
3. A pan of some sort – I’ve used a casserole dish, a round pan, a square pan, and a disposable round/square pan…all work great
*I have tried other brands of cookie dough and will never use anything else but Nestle Tollhouse (and this post is in no way affiliated with them…it just tastes better)

How to Make: 
Squish the roll of cookie dough into a greased pan and bake at 350 degrees for 15-20 minutes, depending on the thickness of your cake.
Notes: Of course that is the basic recipe.  I like my cakes a little thicker, so I usually buy the bigger roll of cookie dough and use a casserole dish size pan. It’s always easier to save leftover cookie dough than to have a cookie cake too thin.  For the following pictures, I used the smaller roll and an 8×8 inch pan.

Squish cookie dough flat in pan evenly.  I break it into big chunks for easy spreading.

 Bake it at 350 degrees for 15-20 minutes.  I always start with 15 minutes and add to it.  I like my cookie cakes gooier than crispier, so I keep a close watch after 15 minutes.  This one took about 20 minutes, but would have been just fine with 18 minutes.  It may take longer in a bigger pan.

Let it cool and then ice your cake for fun!  I’m lazy and just put icing in a plastic bag and cut the corner for a small hole.

I really did not spend a lot of time on icing this cake, as it was just for my little fam (and I just wanted a dang slice at this point).  My hole was a tad too big, making it thicker for writing.  Of course, you can use real decorating bags but ain’t nobody got time for that.  🙂

 And ta-da!  I personally like to make these cakes in a round pan similar to what you see in stores.  Then decorate it nicely, especially if it’s for a special event.  Using disposable pans is fine, just make sure the sides of it are at least 1/2 an inch higher than your cookie cake…I learned the hard way one time as all my cookie dough spilled over the edge in the oven. Lol.

 The hardest part making this cake is making sure you don’t cook it too long.  Grab a roll of cookie dough and some icing and go enjoy some cookie cake!  You would not believe the comments I get when I make this.  And the shocked faces, when they learn how easy it is.  Thanks mom for the “recipe.”
I ALMOST FORGOT THE BEST PART…AN ENTIRE COOKIE CAKE FOR $3.00-5.00!!!!

    You can also make the recipe on the back of a bag of chocolate chips and instead of making individual cookies spread into a 13×9 pan. My mom use to do this all the time when we were kids.
