Meals/Groceries for March #1

I love a new month!  It’s a clean slate for the budget.  As you may know we typically budget $300 for groceries.  And lately have spent $320-350.  I’m assuming that’s due to Beckham’s (15 mo) increase in “adult-like food”.”  Ryan is FINALLY done with basketball, so I have a husband once again!  I cannot tell you how happy this makes me…I have help in the evenings now, which is just beautiful!  This also means less running through a drive-thru and more home cooked meals.  Here’s the menu this week:

Dinners:
Sunday – Pot Roast w/ carrots/onions, mashed potatoes.  I took a packet of onion soup mix (mixed with 2 cups warm water), poured it in the crock pot with the roast, salt and peppered it, and cooked it on low for 6 hours.  I added the chopped carrots and onions the last 1.5 hours.  Easy.  Delicious.
Monday – Crusted Catfish, potato fries, green beans.  I’m using this breading for the catfish.
Tuesday – BBQ Sandwich (using leftover roast), chips
Wednesday – Stuffed Peppers – I’ll post the recipe soon
Thursday – Cajun Chicken and Shrimp Pasta – just adding shrimp to the original recipe
Friday – New York Strip, corn (grilling outside).  Will also grill some marinated chicken for future meals like salads and quesadillas.
Saturday – Eating out/leftovers (Spring Break officially starts for my husband, so we’ll be having a lot of date nights throughout the week).
Sunday – Eating out/leftovers

Lunches:
Sandwiches – Egg Salad, PBJ, Ham
Chicken Cobb Salad
Smoothies

Breakfasts:
Breakfast Sandwich (Egg McMuffin)
Oatmeal Bake – this is SO good
Eggs Benedict

Below are the groceries I bought this week.  I had to make a grocery run on Friday because we were going out of town for the night and I needed some things for Beckham.  I did my grocery shopping on Sunday and went to four different stores.  We usually don’t do that, but these stores had some really good deals!

Albertson’s – $6.54
2 cantaloupe, catfish

Kroger – $14.84
Boar’s Head deli ham, strawberries, grapes, chicken (1.68/lb)

Tom Thumb – $13.62
New York Strip (4.99/lb), soda (for the hubster), chips (these puppies were regularly 4.29 on sale for 1.88)

Walmart – $55.22
I used a few coupons (chips, Dole fruit, Mio Fit, cereal not pictured)

COST: Last Friday I got a roast and B’s organic milk at Market Street ($14.86) and some items at Walmart ($24.86).  Total on Friday – $39.72.  Total on Sunday – $90.22.  Total for March #1 – $129.94!!!

I usually spend more the first week of the month.  I have about $170 left for the month of March.  During Spring Break we’ll probably dine out more than usual, but we have that budgeted for already.
