Tap tap tap. Is this thing on? It’s been a while since I’ve blogged. Summer break always makes me slow down with blogging, especially when I have several things going on. I’m in party planning mode over here and trying to get everything squared away before Friday when we have to leave for an awards banquet for Ryan.
But I wanted to share a little life lately and a yummy EASY chicken wrap that is perfect for lunch. Lunch is the hardest meal for me to come up with.
First up, a little of what we’ve been up to lately.
Beckham spent the night with my parents on Monday and they took him to his summer day camp so we had some much needed time to finish some things. We went over to their house last night to have dinner and hangout (and retrieve B). It’s something we really enjoy doing in the summer.
Now on to a delicious EASY recipe for lunch. It uses leftovers which is great! It shouldn’t really be called a recipe, but more of an idea for lunch.
What you need:
-Leftover grilled chicken (You could use any form of cooked chicken, but I think grilled taste best).
-Lettuce and tomato
-Tortilla (we use the tortillas shown below).
I cut up some leftover grilled chicken, add some BBQ sauce to it and heat it in the microwave for about 15 seconds (until it’s warm). Stir it around so all the chicken is covered in sauce. Then just assemble it and drizzle some Ranch over the top. I do heat the tortilla as well before I assemble it.
